Tomas came from The Standard Grill in the Meatpacking District and has run the floor here since opening night. He is the one who decides how a room of a hundred and sixty seats and a terrace of sixty holds together on a Saturday. Private events come to him: the Ferry Room, the terrace, and the nights we take the whole place over.
