Ines is our wine director and came from Del Posto. The cellar is hers, and so is the list: Assyrtiko from Santorini, Vermentino from Sardinia, Nero d'Avola from Sicily, and a Provence rosé that stays on the terrace all summer. She pours the winemaker dinners, where the people who made the wine sit at the table.
